1. Millet Plain Dosa

A plain dosa is the purest expression of what South Indian food is about- a thin, golden, perfectly crispy crepe made from fermented millet batter, served with coconut chutney, tomato chutney, and sambar. There is nothing complicated about it, yet the depth of flavor from fermentation and the contrast of textures - crispy crepe, silky chutney, warm sambar- makes it deeply memorable.

2. Millet Idli with Sambar
